Step by Step Method
Step 1
Place corn in a bowl; slightly crush with a potato masher.
Step 2
Stir in chicken, egg, milk, melted butter and seasoned salt.
Step 3
Combine flour with baking powder and cayenne; stir into the corn mixture, just until combined.
Step 4
Season with black pepper.
Step 5
In a skillet heat 2 inches of oil to medium heat.
Step 6
Drop heaping tablespoonfuls into skillet, then fry for 3 minutes on each side or until golden brown.
Step 7
Drain on paper towels.
