Step by Step Method

Step 1

Prepare tart crust and place in a 11 x 8 inch rectangular pan but before baking press the pine nuts into crust. Bake according to your favorite recipe and let cool before proceeding.

Step 2

After cooking crust, increase oven temperature to 400 degrees F.

Step 3

In a bowl toss the tomatoes with olive oil, the chopped oregano, 1/2 teaspoon slat and 1/4 teaspoon pepper and transfer to baked crust. Bake 15 minutes.

Step 4

Top with the goat cheese and olives and bake another 10 minutes.

Step 5

Sprinkle with oregano leaves.
