"This recipe is different than the usual Cheesy Potato Casserole, it has stuffing on top for the crunch! I know that might sound weird but it is really good. I even make this into a complete meal instead of a side dish. I hope that you enjoy!!"

Step by Step Method

Step 1

Lightly butter the inside of your crockpot.

Step 2

Combine soup, sour cream, onion, 1/4 c butter and seasonings in crock pot. Add potatoes and cheese, mix well.

Step 3

Cover mixture with dry stuffing mix and drizzle with the remaining 3 T of butter.

Step 4

Cook on low for 4-6 hours or on high for 2 hours. Do NOT stir while cooking. Optional- You can make a complete meal by adding cubed ham, frozen mixed veggies, and an extra can of soup.

I made these potatoes but I used mashed potatoes instead of the hash browns. They were so good! I had this with green beans sauteed in garlic and oil and baked chicken for a delicious meal that my kids and I really loved!

We just loved this dish! I have varied the Cream of chicken soup by using other cream based soups such as Cream of Asparagus and Cream of Celery for a different flair. This is definitely a dish that we all enjoyed and will make often. Easy to make and it takes very little preparation time. Thanks CountryDiva!
