"So, my husband is not a fan of baked potatoes, I dearly love them. This recipe was an attempt to please both of us and it absolutely worked. Love these taters, we typically serve these whenever we grill steaks. These taters are low in fat, although you can use full fat sour cream for the dipping sauce if desired."

Step by Step Method
Step 1
Arrange potatoes on a large microwave dish. Drizzle with olive oil and sprinkle with seasonings - salt, pepper, onion powder, paprika, thyme, cayenne and parsley flakes. Cover with plastic wrap or a paper towel and cook in microwave for 10 minutes. You don't want them completely cooked, about halfway finished.
Step 2
Cook potatoes over hot coals for approximately 5 minutes per side - until you see a nice browning, and serve with the dipping sauce.
Step 3
For the dipping sauce - combine the sour cream, garlic clove, diced green onions and dry ranch dressing. Mix well and chill until serving time.
