Step by Step Method

Step 1

Brown sausage in large skillet, crumbling with fork as it browns.

Step 2

Add green pepper & onion to skillet with sausage and cook for 5 minutes.

Step 3

Drain fat as needed.

Add tomatoes & seasonings, stir well.

Step 5

Pour in blackeyed peas with the liquid in the can.

Step 6

Cover and simmer for 15 minutes, stirring occasionally.

Step 7

Serve hot with grated cheese on top.
