Step by Step Method

Step 1

Break up sausage into 1/2 inch pieces and put into a large soup pot (2 gallons) with diced onions.

Step 2

Season lightly.

Step 3

Saute sausage and onion over low heat until sausages are golden.

Step 4

Be careful not to burn onion.

Step 5

Drain fat.

Step 6

Add hot stock and bring to a simmer.

Step 7

Add tomatoes and rice and cook covered until rice is cooked 20 minutes.

Step 8

Add water as needed.

Step 9

Add spinach and cook 5 minutes.

Step 10

Season with salt and pepper to taste.

Step 11

Garnish each bowl of soup with a tablespoon of shredded mozzarella.
