"This is such a cute looking breakfast or brunch item. I can’t remember where I found this recipe, but, it has been in our regular rotation for breakfast for a while now."

Step by Step Method

Step 1

In large non-stick skillet, heat 1 teaspoon oil over medium-high.

Step 2

Add bells pepper, and then crack the eggs in center of bell pepper ring.

Step 3

Season with salt and pepper and cook until egg whites are mostly set but yolks are still runny, 2 to 3 minutes.

Step 4

Gently flip and cook one more minute for over easy.

Step 5

Place egg atop romaine leaf or lettuce of choice.

Step 6

Sprinkle with 1 teaspoon oil and parmesan.

Step 7

Serve.

As my husband, said “you’re cooking up some fancy eggs”. Yes, it looks “fancy” and gourmet-like, but it is easier and faster to make than a cat can wink its eye. Love what the peppers do to regular eggs. It’s a do-again. Thank you, QueenBea, for sharing.

I cooked in the rice cooker ,I did green pepper 1st and when it was soft enough for Mr picky added eggs and cheese ,he liked it

Loved this! It was yesterday's company breakfas tand was a big hit. It's very easy to prepare and very pretty. I did find you need to be sure to use the larger of the pepper rings so that the egg doesn't run out.

This is a really neat trick to dress up an egg. It would be lovely on a platter for a brunch buffet with mixed coloured pepper rings. You have to be careful not to over cook - I got mine just in time. I didn't flip them I cooked them with a lid on the pan and a bit of water on the pan.
