"To make this vegetarian, omit the ground beef (and the taco seasoning packet) and replace with a second cup of beans. You can adjust the amount of cheese up or down, depending on how cheesy you want it. I like all chips, but we especially like the Jalapeno-flavored black bean Sun Chips with nachos."

Step by Step Method

Preheat your oven to 350°F (175°C).

In a skillet over medium heat, cook the ground beef until browned. Break it up into crumbles as it cooks.

Drain any excess grease from the skillet and return the cooked beef to the heat.

Sprinkle the taco seasoning mix over the ground beef. Add a splash of water (according to the instructions on the seasoning packet) and stir well to combine. Cook for an additional 2-3 minutes to allow the flavors to meld.

In a mixing bowl, combine the diced tomatoes, fresh corn kernels, red onion, jalapeño pepper, cilantro, lime juice, salt, and pepper. Mix well to make the fresh corn salsa. Set aside.

Arrange the corn chips in a single layer on a large baking sheet or oven-safe dish.

Sprinkle half of the shredded cheese evenly over the corn chips.
