Step by Step Method

Step 1

In the bowl of an electric mixer beat the eggs and then add the milk, salt and sugar. Sift in the flour, stirring to combine. Let batter stand for 30 minutes.

Step 2

Preheat oven to 375 degrees F.

Step 3

Butter two 8 inch round pans (or use cooking spray along with the butter). Sprinkle pans with cinnamon sugar. Place apples in pan (1 used one apple per pan), sprinkle apples with cinnamon sugar and dot with butter. Pour batter over apples.

Step 4

Bake for 30 minutes or until top is golden and set. Cut into wedges to serve. We cut into 4 wedges per pan (8 wedges total) which worked for the four of us.

So we had dessert for breakfast this morning...I cut the recipe in half (it made enough for 3 servings) I used my 8 inch cast iron skillet...it came out perfect...the apple had a bite to it...we felt it was really on the sweet side so next time I'll cut down on the sugar/cinnamon mixture...made for "FYC" tag game...

I didn't use two cake pans, but a huge skillet. This is delicious! We served it with bacon and maple syrup. I used Granny Smith apples (peeled) and with the cinnamon they look kind of dark, but still tasted delicious. We enjoyed this for breakfast for dinner.

This made for a wonderful breakfast dish. My 8-inch round baking dish was in the dishwasher when I made this recipe, so I used an 8-inch square baking pan instead. But other than that, I made the recipe as written, and it was great. I served it with a cup of warm Chocolate Espresso, and it was the perfect pairing to take the chill off this rainy spring morning. Thank you for sharing this lovely recipe ellie. We enjoyed this for breakfast yesterday. Loved that the apples were on the bottom, they rose beautifully thru the pancake. The pancake was light, fluffy and tender, just the way we like them.
