Step by Step Method
Step 1
Preheat oven to 400 degrees.
Step 2
Put goat cheese in a medium bowl and set it aside.
Step 3
Partially cook the bacon in a large skillet in batches. Cook until brown but not crispy, then blot on paper towels.
Step 4
Save 2 tablespoons of the grease. Cook the walnuts in the 2 tablespoons of saved bacon grease. Cook on medium heat for 2 to 4 minutes. Stir frequently until toasted lightly.
Step 5
Add the walnuts and the drippings to the goat cheese, mixing well.
Step 6
Cut a slit in each of the apricots. Place 1 heaping teaspoon of the goat cheese mixture into each one.
Step 7
Wrap a piece of bacon around each apricot; keeping in place with a toothpick.
Step 8
Put each apricot into a 17x12inch sheet pan.
Step 9
Bake them for 10 minutes or until the bacon is crispy. Serve them while they are warm.
