Step by Step Method
Step 1
Soak beans in crock pot overnight, drain the next day.
Step 2
In a pan, heat bacon grease or oil in a Dutch oven and cook the onions until soft and translucent, 5-7 minutes.
Step 3
Add the smoked sausage and cook for another 3-4 minutes.
Step 4
Add the veggies and garlic and cook for another 5 minutes.
Step 5
Add the tomato paste and seasonings and stir to combine and cook for another minute or two.
Step 6
Add to crockpot with beans.
Step 7
Add chicken broth and smoked ham hock to the pot.
Step 8
Cook low 6 hours.
Step 9
Shred the meat off the bone and return the meat to the pot and remove bay leaves.
Step 10
Season to taste.
