"A nice twist on a pasta salad. Fresh asparagus and a creamy lemon sauce make this a quick easy dish. Pair this along a grilled fillet of fish or chicken breast and it makes for a very nice easy dinner. And ... this dressing is also very good over salad greens. Note: If you make this ahead, I like to add most of the dressing to the pasta - but reserve some. The pasta will soak up most of the dressing when you first make it; so, save some of the dressing to add right before serving."

Step by Step Method
Step 1
Dressing ... Whisk all the ingredients in a small bowl and set to the side until the pasta and asparagus are cooked.
Step 2
Pasta and Asparagus ... In a large pot of salted water, boil the pasta according to package directions. Approximately 2 minutes before the pasta is done, add the asparagus, and cook until the asparagus is crisp tender. Then, drain the pasta and asparagus; making sure to rinse under cold water to stop the cooking process. Transfer to a large bowl to cool slightly.
Step 3
Finish ... Add the scallions and dressing; tossing lightly to combine. Then, add the cheese and lemon slices.
Step 4
Serve and ENJOY! ... This is best served at room temperature; but, it is equally as good served cold. This is a wonderful salad for picnics, BBQ's, potlucks, parties, entertaining, etc.
