Step by Step Method

Onion


Step 1

Sauté with olive oil and a generous pinch of salt over medium heat for about 15 minutes, stirring frequently.

Step 2

Add nuts the last couple of minutes.

Step 3

Once caramelized, move onion mixture to a paper towel to crisp up a bit.

Step 4

Meanwhile, get water boiling for the broccoli.

Step 5

Steam until it reaches your preferred consistency, at least 5 minutes with a sprinkle of salt, dry it in a salad spinner.

Dressing


Step 6

Whisk together the salt, peanut butter, lemon juice, honey, oil and water.

Step 7

Pour dressing over broccoli and apples, top with caramelized onions and nuts.

This recipe looked so unique, and I'm glad I tried it. I LOVED the caramelized onions with chopped peanut topping. I could have eaten all of it on its own for a snack. The dressing was well suited for apples and broccoli - with a hint of peanut butter flavor. The only change I might make when making this again is to just blanch the broccoli so it is more crunchy. We really enjoyed this as a side dish to our meal. Thank you!
