"This is a cake that is true to New England with its 4 seasons. Although apples are in abundance in the fall, we have them all year, so you can have this yummy dessert any ole time! Great by itself, but extra special with a big scoop of French Vanilla ice cream rolling off the top! From the Yankee Kitchen, a cooking and recipes show that aired from a Boston radio station, in the 60's and 70's. My mom loved it and I can remember listening to it too! Gus actually gave out the recipes on air and you wrote them down, so you could try them."

Step by Step Method

Step 1

Place apples, raisins and Brandy (or other liquor) in bowl. Set aside.

Step 2

Mix together sugar, oil, eggs, and beat.

Step 3

Sift together dry ingredients.

Step 4

Combine apples, raisins and Brandy (or other liquor) with flour mixture and sugar mixture. Stir to mix.

Step 5

Add walnuts, and mix to combine.

Step 6

Bake at 350 degrees F, for 45-50 minutes.

Step 7

Cut in squares.

Step 8

Serve warm or room temperature.

Step 9

Top with whipped cream, ice cream or sour cream.

At hubbies request I sliced the apples, omitted the nuts and replaced the raisins with dried apple and used Monk fruit for the sugar for dietary reasons. Next time I will try with the apple chopped/diced and cut back to 3 apples (I used 4 and got just over 2lb) and would add the flour and dry ingredients to the wet, stir and then apple to mix and hope it will be easier to combine. Cooked at 170C and was done in 35 minutes. Loved the taste of the spices with the apples and ended up with 20 good sized serves. This cake worked out very well with us. Instead of brandy we used juice and in place of the raisins we used currants and also skipped the nuts. Very good cake! Thanks for sharing!
