"The cook time may vary depending on the size of your potato cubes. Keep an eye on the potatoes and adjust the cooking time accordingly to get crispy potatoes. Step by Step Method

Step 1

Preheat your air fryer to 400°F (200°C) for 5 minutes.

Meanwhile, wash the yellow potatoes thoroughly and cut them into bite-sized pieces. If using baby yellow potatoes, you can leave them whole.

In a large bowl, combine the olive oil, salt, black pepper, garlic powder, yellow curry powder, and paprika (if using). Mix well to create a paste-like consistency.

Add the potato pieces to the bowl and toss them with the curry spice mixture, ensuring all the potatoes are evenly coated.

Once the air fryer is preheated, place the potatoes in a single layer in the air fryer basket. You may need to cook them in batches depending on the size of your air fryer.

Step 6

Cook the potatoes in the air fryer at 400°F (200°C) for about 15-20 minutes, shaking the basket or flipping the potatoes halfway through cooking. The cooking time may vary depending on the size of the potato pieces, so check for doneness and adjust the cooking time accordingly.

Step 7

Once the potatoes are golden brown and crispy on the outside, remove them from the air fryer and let them cool for a few minutes.

Step 8

Garnish with freshly chopped cilantro leaves, if using.

These potatoes are very addicting! I made them earlier in the day in my counter oven outside. And found myself snacking on them during the afternoon! Reheated them for dinner and DH was over the moon happy with the flavour. I did use a medley of different coloured baby potatoes that I left whole. They probably were not as crispy as in the air fryer, but still awesome! Had a wee bit of the spice mixture left over and brushed it on 2 chicken thighs and baked them too. Served this wonderful meal with asparagus. These will definitely be made again and again! Thank you for sharing NELady! Made for Billboard Recipe Tag.
