Step by Step Method

Step 1

Preheat air fryer to 400-degrees F.

Step 2

Drizzle the potatoes with oil. Distribute with remaining ingredients (rosemary - pepper); toss gently to coat.

Step 3

Place on ungreased tray in air-fryer basket. Cook until the potatoes are golden brown and tender, 10 - 12 minutes, turning once (if required, it all depends on the air -fryer). Sprinkle with lemon peel, additional salt and pepper, if needed and an additional squeeze of lemon juice, if you'd like. Sprinkle with parsley (optional).

Loved these! After roasting in the air fryer, I tossed them back into the bowl with the leftover oil mixture. It gave them a great lemony garlicky flavor! We'll be making these again!

These are so tasty, I love the lemon tang, reminds me of Greek potatoes but with rosemary instead of oregano. This is a keeper.
