"This soup is very hearty and very tasty. It's made from leftover stuffed peppers. So I always make enough so I have one left to make soup the next day. If you use a tomato based sauce with your stuffed peppers, be sure to save it for the soup."

In large saucepan, heat oil and saute onion and peppers. Add the rest of the ingredients (*see note for can of tomato sauce). Stir well and simmer covered for 45 minutes.
