Step 1: After browning the lamb add prepared onions, mushrooms saute 5 minutes
Step 2: Add jalapeno, salt, pepper, oregano, cumin, hot sauce and tomato paste, saute a few more minutes
Step 3: Divide the lamb mixture between the for half prepared peppers
Step 4: Place on an oven proof tray, bake lightly covered with foil in a 375 oven for 15 minutes
Step 5: Remove foil, add chesse, continue baking for a further 10 minutes or until the cheese is lovely and brown Serve hot
