Step 1: Mix ground beef, egg, bread crumbs, horseradish, steak sauce, Worcestershire sauce, garlic, dried onion, salt, and black pepper in a bowl.
Step 2: Shape into 8 patties about 6 inches wide and 1/2 inch thick.
Step 3: Put in fridge overnight covered.
Step 4: Next day...
Step 5: Onions:
Step 6: Heat butter in a skillet over medium-low heat.
Step 7: Cook and stir onion and mushrooms in melted butter until the onions brown, 15 minutes.
Step 8: If using sugar, sprinkle brown sugar over the mixture and continue cooking until the onions caramelize, 5 minutes more.
Step 9: Remove from heat and set aside.
Step 10: Meat:
Step 11: Remove from refrigerator.
Step 12: Cook bacon until crisp.
Step 13: Dry toast buns.
Step 14: Cook burgers on preheated grill or skillet until completely browned, about 3 minutes per side.
Step 15: Reduce heat to medium and cook burgers another 3 minutes per side.
Step 16: Top each burger with a slice of pepper jack cheese for the last minute of cooking.
Step 17: Assembly:
Step 18: Top each burger with about 1/8 of the mushroom and onion mixture, 2 pieces of bacon, and 1 tablespoon guacamole on top of bun to serve.
