Step 1: Prepare pasta as directed on package. Once cooked, drain in colander. While still hot, add 1 Tbsp butter and 1/2 Tbsp lemon juice to the hot pasta, and toss gently to allow melted butter to coat the pasta. Set pasta aside.
Step 2: While pasta is cooking, heat olive oil and remaining 1 Tbsp butter in a large skillet.
Step 3: Season the salmon pieces with salt and pepper, then cut (or separate) salmon into bit-size pieces. Add salmon pieces to skillet, and sauté for 3 to 4 minutes each side, set salmon aside.
Step 4: Add asparagus strips to the skillet, and sauté for 4 to 5 minutes or until softened.
Step 5: Add drained pasta and cooked salmon to the skillet, and gently toss until well combined.
Step 6: Remove skillet from heat. Add parmesan cheese to the pasta mixture, and toss gently until well incorporated. Season with additional salt and pepper, if desired.
Step 7: Divide the pasta mixture among 4 pasta bowls or 4 serving dishes with rimmed edges. Garnish the top of each serving with chives and lemon zest, and serve immediately. SERVING SUGGESTION: It’s great served with warm garlic bread or cheese bread!
