Step 1: Melt 2 tablespoons butter in a large skillet. Add onion, tomatoes, green pepper, and parsley. Saute for a few minutes until onions and peppers are tender. Season with salt and pepper to taste.
Step 2: Add peas, eggs, and remaining 1 tablespoon butter. Stir over medium heat until eggs are well scrambled to your taste.
