Step 1: Drain the beets keep juice , should measure 1 cup
Step 2: Add vinegar to it
Step 3: In sauce pan heat butter, add flour. Heat until bubbly.
Step 4: Stir in juice gradually, whisking constantly. Bring to a boil cook 2 more minutes
Step 5: Add beets, heat
Step 6: Top with sour cream and sprinkle with caraway seeds
