Step 1: Whisk ingredients and let sit for 5 minutes. It will look lumpy, that's okay.
Step 2: Meanwhile, heat heavy non-stick skillet over medium-high heat. Melt butter in pan.
Step 3: Add eggs to pan, gently folding with a heat-proof spatula as they cook.
Step 4: Cook until eggs are just about done, then remove from heat.
Step 5: Increase cooking time for more servings, but don't increase baking powder over 1/2 teaspoon.
Step 6: Serve on heated plates.
