Step 1: In a medium mixing bowl, whisk together dry ingredients. Cut in butter and coconut oil until it is crumbly.
Step 2: Press half of the crumbles into the bottom of the baking dish.
Step 3: Smooth apricot preserves over pressed crumbles.
Step 4: Top with remaining crumbles.
Step 5: Microwave on high for 9-12 minutes (1200 watt). *Turn every 3 minutes if your microwave doesn't have a turn table.
Step 6: Remove from microwave, cover with foil, and let sit on counter for 10 minutes.
Step 7: Uncover, cool, and cut into wedges or squares.
