Step 1: In a bowl coarsely mash the strawberries using a potato masher or a fork, then place into a saucepan. Cook the berries over medium heat stirring until they begin to thicken (this should take about 6-7 minutes).
Step 2: Reduce heat to low and mix in sugar (start with 1-1/2 cups) and 1-2 teaspoons lemon juice, add in more sugar if desired. Increase the heat to medium and simmer gently until the mixture thickens and mounds on the spoon (about 20-22 minutes) stirring frequently. Remove from heat and cool just slightly.
Step 3: Place in refrigerator for rapid jelling (the mixture will thicken more while chilling). When cooled divide into plastic containers, seal tightly with a lid and freeze.
