Step 1: Place the chicken in a large bowl and add the chives & green onions, olives, parsley, salt and pepper.
Step 2: Add enough mayonnaise to make a creamy but not sloppy mixture.
Step 3: Cover & chill until ready to assemble the sandwiches.
Step 4: Butter all slices of square bread.
Step 5: Divide the chicken mixture between four slices of bread.
Step 6: Cover with remaining bread slices.
Step 7: Place on a wax paper lined rimmed baking sheet, cover with wax paper & a damp tea towel & chill for at least 1 hour.
Step 8: Remove from the fridge when ready to assemble your sandwich trays.
Step 9: Trim the crusts & cut each sandwich into rectangles.
