Step 1: Wash and pat the herbs dry with a paper towel.
Step 2: Chop or mince the herbs and pack 1-2 teaspoons of herbs into an ice cube tray or silicone ice cube tray or until each cube is 3/4 full of herbs. (How many herbs will depend on the size of the cubes tray used).
Step 3: Pour olive oil over to cover the herb and fill up the ice cube. Push any herbs down using a fork until they are all covered with the oil.
Step 4: Place the ice cube tray into the freezer for about 8 hours or until the cubes are solid, remove the herb cubes from the tray and store into marked and dated zip lock bag's and place back into freezer.

Step 8: Place the ice cube tray into the freezer for about 8 hours or until the cubes are solid, remove the herb cubes from the tray and store into marked and dated zip lock bags, and place them back into the freezer.
Step 9: *Note* using boiling water helps to blanch the herbs, which in turn retains their flavor and their color.
