Step 1: In a large mixing bowl, mash the cooked chickpeas using a fork or potato masher until they are partially crushed but still have some texture.
Step 2: Add breadcrumbs, grated carrot, grated zucchini, minced garlic, chopped red onion, chopped parsley, chopped cilantro, soy sauce (or tamari), olive oil, salt, and pepper to the bowl with the mashed chickpeas. Mix everything thoroughly until well combined.
Step 3: Divide the mixture into 4 equal portions and shape them into patties.
Step 4: Heat a non-stick skillet or grill pan over medium heat. Add a little oil if needed.
Step 5: Cook the veggie patties for about 4-5 minutes on each side or until they are golden brown and heated through.
Step 6: Slice the burger buns in half and lightly toast them if desired.
Step 7: Spread egg-free mayonnaise on the bottom half of each bun.
Step 8: Place a cooked veggie patty on top of the mayo.
Step 9: Layer the burger with lettuce leaves, sliced tomatoes, sliced beetroot, pineapple rings, and sliced avocado.
Step 10: Add a slice of cheese on top of the patty if using.
Step 11: Finally, drizzle some tomato sauce (ketchup) over the top of the burger.
Step 12: Place the top half of the bun over the filling to complete the burger.
