Step 1: Using water wash & scrub the mussels thoroughly and put in a large pan with a pinch of salt and heat in the water that is remaining on the shells for approx 10 minutes until they have opened; (removing each mussel as they open) time will depend on when the shells open.
Step 2: NOTE: Discard any mussels that do not open.
Step 3: Remove the mussels from the shells and dip in the flour.
Step 4: In a bowl beat the egg with a pinch each of salt and pepper added; dip the mussels into the egg; allow excess egg to drain and dip into the flour again.
Step 5: Heat the oil to 190c/375f.
Step 6: Drop in the mussels, keeping them apart using a fork, and fry for about 3 minutes until golden.
Step 7: Drain on absorbent paper towels and serve hot accompanied with a wedge of lemon.
