Step 1: Preheat oven to 425 ºF
Step 2: Put half of the butter into small cast iron pan and let it melt in the oven while preparing the batter.
Step 3: Whisk eggs and milk together.
Step 4: Add flour, vanilla, cinnamon, and salt. Whisk until smooth.
Step 5: Pour into prepared pan and bake until light brown and puffed - about 15 minutes.
Step 6: Meanwhile, melt rest of butter in small skillet.
Step 7: Add sliced apples, and stir until they start to get tender. They may be visibly browning on the edges
Step 8: Add brown sugar and maple syrup. Stir together until apples are tender and sugars are syrupy.
Step 9: Serve apples on top of Dutch Baby.
Step 10: Optional - sprinkle with powdered sugar.
Step 11: Alternate topping: add 1 cup fresh blueberries, sprinkle of powdered sugar and drizzle with 1 tablespoon pure maple syrup.
