Step 1: Cut large baked sweet potatoes in half lengthwise.
Step 2: Carefully scoop out the inside
Step 3: Leaving a little of the sweet potato as a lining for the skins.
Step 4: Beat as for plain mashed sweet potatoes,
Step 5: Adding 1 tablespoons butter,seasoning and hot light cream.
Step 6: Stuff back into the shells, brush the top with melted butter, and reheat at 425 F (hot oven) until hot and toasted lightly
