Step 1: In a medium saucepan, stir together the sugar, cornstarch and salt.
Step 2: Whisk in the half-and-half and cook and stir over medium heat until the mixture is thickened and bubbly, this takes about 25-30 minutes.
Step 3: Remove from heat.
Step 4: Stir in butter, brown sugar and vanilla until butter melts.
Step 5: Pour into baked pie shell and sprinkle lightly with cinnamon.
Step 6: Bake the pie in a 325° oven for 30 minute the center of the pie will not be set.
Step 7: Cool the pie on a wire rack for 1 hour.
Step 8: Chill for at least 3 hours before serving, pie will set up upon chilling.
Step 9: Cover for longer storage.
