Step 1: Arrange the tomato slices on a plate or board. Sprinkle tomato's evenly with the sugar and 1/4 teaspoon of the salt then let the tomato's sit for a 5 minutes until the sugar dissolves.
Step 2: Arrange the sliced tomatoes on a serving platter, alternating with the sliced mozzarella and basil leaf in between (e.g. Tomato, basil then mozzarella in a line or circle) then sprinkle salad, evenly with the remaining 1/4 teaspoon of salt and the freshly ground black pepper.
Step 3: Drizzle about 1 tablespoon of olive oil over top, followed by an equal amount of the balsamic glaze.
Step 4: Garnish the platter with sprigs of fresh basil, if desired.

Step 7: To make the Balsamic Glaze:
Step 8: In a small saucepan, bring the balsamic vinegar and brown sugar or honey to a simmer. Cook over low heat, stirring occasionally, until reduced by half, about 30 minutes. Allow to cool, store in an airtight container in the refrigerator.
Step 9: I use a microwave for this recipe - Using a deep microwave safe bowl microwave on high for approximately 2-3 minutes.... keeping a constant eye on it. It does bubble up high so you don’t want it to overflow. Once the mix had bubbled for 30 seconds it should be incorporated with the sugar. Make sure there are no sugar granules remaining before setting aside to cool. It does thicken a little when cooled. store in an airtight container in the refrigerator.
