Step 1: Preheat oven to 350F.
Step 2: Coat a cooling rack with non stick spray and place on baking sheet; set aside.
Step 3: In a small bowl, combine Parmesan, thyme, oregano, basil, garlic powder, salt and pepper to taste.
Step 4: Place zucchini on prepared rack.
Step 5: Drizzle with olive oil and sprinkle with Parmesan mixture.
Step 6: Bake for about 15 minutes or until tender.
Step 7: Then broil for 2-4 minutes or until crispy and golden brown.
Step 8: Garnish with chopped parsley, if desired.
Step 9: Serve immediately with ranch dressing or dip of your choice.
