Step 1: Place half of the onions in a 5-quart slow cooker. Top w/garlic & half of the beef. Top w/remaining onion & beef. Combine coffee & soy sauce; pour over beef. Cover & cook on low for 9-10 hours or until the meat is tender.
Step 2: Combine cornstarch & water until smooth; stir into cooking juices. Cover & cook on high for 30 minutes or until the gravy is thickened. Serve immediately.
