Step 1: Heat a nonstick skillet over medium-high heat.
Step 2: Sprinkle pork with approximately 1/8 teaspoon garlic salt, and very lightly sprinkle on cayenne pepper (optional).
Step 3: Combine coriander, cumin, smoked paprika, and sugar in a shallow bowl. Sprinkle spice mixture over one side of pork.
Step 4: Add oil to pan; swirl to coat. Add pork to pan, spice side down.
Step 5: Cook 2 minutes on one side, until browned.
Step 6: Turn pork over, and cook 4 minutes, or until done.
