Step 1: In a skillet over medium heat melt butter and saute onion, celery, and peppers until tender crisp, approximately 2 minutes. Remove skillet from heat and set aside.
Step 2: In a saucepan bring the chicken broth to a full boil and remove from heat. Quickly stir in the minute rice, onion mixture, salt if using and pepper. Cover saucepan and let rice stand for 6-7 minutes. Stir rice to fluff and serve.
