Step 1: Whisk flour, baking powder, salt and sugar in a large bowl. Add milk, egg, melted butter and vanilla, whisking until smooth. Add club soda to reach desired consistency.
Step 2: Let batter sit for 5 minutes, then add more club soda if needed.
Step 3: Meanwhile, preheat lightly oiled griddle over medium high heat.
Step 4: Pour about 1/4 cup for each pancake, then sprinkle pecans on top. Once large bubbles form and begin to pop, turn pancakes and cook until golden brown on other side.
Step 5: Serve immediately or keep on oven-proof platter in oven at 170 degrees.
Step 6: Original recipe called for brushing additional melted butter on each pancake as they came off the griddle.
