Step 1: In a large pot over medium high heat add the oil and then cook the sausage until browned (5 minutes), stirring occasionally. Using a slotted spoon, transfer sausage to a bowl.
Step 2: Stir in vegetables (onion - celery) and Italian seasoning, cooking until vegetables are soft (8-10 minutes).
Step 3: Stir in lentils and broth and bring to a boil, reduce heat to a simmer and cook until lentils are tender (20-30 minutes).
Step 4: Stir in sausage and cook another 10-15 minutes or until vegetables are tender.
Step 5: Season to taste with salt and pepper and stir in the spinach, cooking until spinach is wilted (3-5 minutes).
