I don't really do any preserving. I have frozen some cherry tomatoes and herbs.

We have two peach trees, two pear trees and six apple trees. I started watching my grandmother can with my mother and then my sister and I followed. It's a wonderful family tradition that I hope will be passed on to new generations. My favorite "family" recipe is for home made ketchup.

I've made peach jam and peach salsa, pear jam, caramel apple jam and applesauce. Peach and apple chutney have been among my favorite accomplishments because most people stick to the every day stuff. I froze 12 bags of apple pie filling so I'm set for the Holidays. We also froze 12 bags of butternut squash this year.

There's only two of us now since we are empty nesters. So, what do I do with it all you ask? It makes wonderful gifts and it's great to see the smiles on people's faces. I'd post some photos but I'm new here and haven't figured out how to do that yet.

Pears! Redhot curly pears, pear halves, pear sauce. Singapore chili sauce (hot & yum!) Pickled garlic. Garlic chili sauce. Plum jam. Peach & nectarine jam. Peach habanero jam. Salsa! Lots of it! Canned tomatoes - all sizes & colors. Tomato juice using cherry tomatoes and pastes - Fantastic! Pickled Okra - hot & not.

Will start to render pumpkins next week - pumpkin butter & puree to go into the freezer. Will try drying some sugar pumpkin in slices too. Need to get a couple of bushels of apples for sauce, jelly & butter. Plan to dry 1/2 bushel too.

Will be making varietal hot pepper jellies in the next 2 weeks - I do not put in the bell pepper so each one shines with the flavor of the pepper - it helps me balance flavors when making hot sauces - if I sampled them fresh all I can appreciate is Hoooot! Habanero, Bishop's Crown, Scotch Bonnet, 3 different kinds of jalapeno (the yellow ones seem less grassy), Cayenne, Kung Pao, Fish, Lemon Drop, Hot Banana...

APPLES, call me a sucker for punishment. I picked up 2 cases at the Farmer's Market the other weekend, and came home and made 3 dozen 1/2 cup jars of applesauce, Frozen Apple Pie Filling, 2 went into crusts before freezing, 1 baked right away and 3 pans frozen for crisp later on, I just use disposable foil pans. I still have a couple from last year. Then dried a bunch, I have 1 1/2 gallon jars filled with dried apples. Then last weekend I found more 1/2 cup jars so I went and bought another 3 dozen jars and 20 lb galas and made Apple Pie Sauce (aka Spiced Apple Sauce), hubby said it tasted like apple pie so I am calling it that. I used cinnamon, ginger and nutmeg to season it.

I still want more apples, I would like to fill up that gallon jar. And maybe can some slices in syrup. I remember one year when I was a kid and my dad and his girlfriend at the time did it and that is all I wanted every time it was my turn to pick the canned fruit for dessert. My brother and sister would groan when my dad told me to go pick what we would have, they wanted me to pick apricots or plums.

Maybe some pears too. But I am not too sure. I have doubled the number of jars I have in the house this year,and I am all out of space to put them, hubby was saying I could probably move his car stuff and put in a cupboard there and get him bigger shelves for his stuff, but we haven't gotten around to that.

I have done a lot this year and have enjoyed every minute of it. I made jams and relishes. Lots of salsa and applesauce , I have 200+ jars but I have sold close to 100 at a sale to raise money for the mission I volunteer at .

With the skyrocketing price of meats the past couple of years I've been pressure canning meats when I find them on sale. In the past month I've jarred 70 pounds of B/S Chicken Breast. These are just a few of the jars...

I have never had meat prepped that way sloppy, what type of meals do you make with it?

Dissie, it's just like the canned chicken you'd buy in the store, just a larger jar but better because it's "homemade". I also can beef and pork. We use it for BBQ sandwiches, wraps, mexican dishes like enchilada's and all kinds of casseroles. Sometimes I'll just use a jar of meat and make up some gravy and serve with mashed potatoes and a veggie. It's my Go-To Fast Food! :D

Sloppy it sounds wonderful! I need to think about trying this. Thanks, may need some pointers when I do try it, well lots of pointers.... :lol:
