How to make this dish *more Mexican*
Boiled chicken
noodles
stewed tomatoes (drained)
marinated artichoke hearts (chopped)
sauteed onions and peppers
oregano
chili powder
Mexican cheese

well I always use taco seasoning spice in place of chili powder I think it has more flavor and add in a can of green chilies

Second, artichokes to me are NOT mexican.
Do you have olives, cilantro
jalapenos or poblano peppers
cumin is a good spice, oregano is ok
garlic a must
Maybe add some salsa
I would try to do a chicken type of ragu over noodles vs a casserole. That would be my thought. Or a chicken stew ...

I'm using the artichokes because my wife won't eat olives or peppers (except for the canned green chilis which I will now include) and I felt a need to include something.

I would not use the chili powder. I would use cumin, cilantro, and oregano, as well as the canned chilies.
