What WAS on Your Plate & WHAT'S for Dinner 9/24-9/25

IT IS SATURDAY RIGHT? WOW ... WHAT A COUPLE OF DAYS!

Last night, my catering formal dinner party ... it went perfectly; but, it was 10 when I got home. Then, up at 3:30 today.

Me and 4 others left at 4:30am; the run started at 8am. I ran w/one lady and her 10 yr old son; and, another with her 4 yr old in one of those running strollers - there were 18 in our group. I was hot; even at 8am.
The 5 of us lived the furthest from the race; so, we grabbed a bite from a local food truck and headed home.
FYI, it was fun; and, the food truck food AWESOME - the name 'Better B's Breakfast.'

Dinner: My seafood stuffed shells (freezer stash), corn on the cob; creamy cucumber salad; and, watermelon

KC, your dinner sounds great!
Tonight I made comfort food: meatloaf, roasted sweet potatoes and green beans. And I made some of deinia b's pineapple cream muffins http://www.recipezazz.com/recipe/pineap ... fins-18741. They're so moist, they're like cupcakes.

fish (http://www.recipezazz.com/recipe/herb-c ... lets-14919) baked potatoes and green beans and ice cream for dessert. I used red snapper - so a bit longer in the oven.

We had tilapia fish tonight, fresh corn cobs and a salad, I stuffed to the brim :lol:

BabyB, I actually really enjoy tilapia. It's a nice plain fish that you can really do anything with. Like a blank canvas. I always keep some on hand.

So, what is everyone cooking tonight?

Lady #3: Pesto grilled skirt steak; artichoke casserole; roasted balsamic campari tomatoes; whole wheat rolls

Me: A new baked chicken recipe w/chicken breasts, fresh figs and shallots (onions); arugula salad w/beets

I am looking for something to do with fresh figs -- can you tell me how you prepared and figs and shallots. Thanks!

Ellie, sorry I missed this yesterday - apologies.

I do several things with fresh figs.
For figs and shallots, cut, both in half. Toss lightly in a mix of 3/1/1 olive oil, balsamic, and honey but, just a light coating. S/P, then roast at 400 on a baking sheet lined with parchment or foil for easy clean up.

You can also use equal parts balsamic and honey, s/p, and roast 400 for about 15 minutes. Great on salads. Top with walnuts, fresh pears and gorgonzola.

Figs make a great chutney; and, also good reduced with cranberries and shallots; then, poured over baked brie.

I also love them fresh mixed w/arugula and tossed with goat cheese. Serve with a warm mustard honey vinaigrette.

Try mixing chopped fresh figs, dried apricots, feta or gorgonzola, chopped walnuts, rosemary, thyme, and stuff inside a chicken breast and grill.
