KC, that grilled mango shrimp sounds really good. And I always love to cut up an apple and cook it with cabbage.
Tonight I just had rotisserie chicken, leftover lemon-rosemary spaghetti http://www.recipezazz.com/recipe/lemon- ... icken-5089, and some peas with bacon bits.

I ended up making nothing. Met a friend for a quick happy hour. Just split a couple of appies, cup of soup. Plenty. May make a little popcorn for a snack tonight.

Hey my chicken will be good tomorrow.

FYI, I love the apple and cabbage too; just to easy and delicious. Plus low cal. A nice side - I think sometimes we forget about cabbage other than just slaw. It's really delicious.

And, I love your simple dinner. Sometimes, simple is really good. Sounds delicious.
