Both look absolutely amazing. The focaccia looks wonderful.

I actually made parkerhouse rolls this year. Me, baking, lol. They turned out good. I baked ahead and froze them. My son stopped by for leftovers last night and took some home with him; I was too stuffed to have one with dinner.

I've baked with instant yeast and it always turns out great, trust me, I'm not an experienced baker either

Wow the pics have amazed me! Love the dinner rolls shaped as pumpkins! Adorable! I agree on the instant yeast, just be careful to not kill it with over hot water. It works perfectly. I use it all the time.
