For beef I use red wine, and for poultry and fish I use white wine.

I agree, and I would add that we also use white wine in pork dishes. Choose a wine you would drink.

I agree with red for beef, but from there it depends on what you're doing with it and what kind of beef you have what variety I'd recommend. If you're looking for just something general, I usually do burgundy or pinot noir with beef and chardonnay with poultry or pork.

Definitely DO NOT buy anything called "cooking wine"!!! It basically amounts to grape juice with a cup of salt in it.

Red, I prefer cabernet as it isn't sweet. Other reds to me don't work as well. Merlot is also good, but milder and a bit sweeter or fruitier.

Expensive is not always best. A good descent priced wine under 10 dollars is fine to cook with. If it tastes good and you would drink it. Cook with it.

Remember the flavor intensifies, so that it what the flavor will be. My friend cooks with a 25 dollar bottle of wine and I HATE IT.

I cook with Walmart. 3.99 a bottle red and for me personally with stews or soups, etc. It is fine. But that is me.

For catering clients, I do pick a better wine ... but under 10.00. They are just as good when mixed with broth, vegetables and seasoning.

It really is personal taste. But cabernet is a dark rich, wine that works very well with cooking beef.

The bottom line is, any decent wine you would enjoy drinking. I'd prefer a red with beef, but if you don't like red, use white. DON'T use a really expensive wine; you'll just be wasting it. Use the cheapest wine that tastes good to you.

I like a dry red wine with a robust flavour such as burgundy. It should be a wine you would enjoy drinking. I've found that really cheap wines what you don't like the taste of don't give the best results.
