I have two propane BBQ's at camp and I have an infra red BBQ at home and the infra red is the cats meow..... I love that thing. Everything cooks up evenly, no hot spots.......
I also like to grill over the coals at camp but it doesn't happen that often as you must be more vigilant. We are always so busy with friends and family dropping in so we take the easy way out.

anyway i found this recipe for "over the coals" , I'll be making it but it will be in the oven broiler. quite piddley after seeing Bea's smoked chicken and all those wonderful looking grilled wings but it does sound pretty tasty with a nice bit of heat

I'll be looking for a family pack of chicken wings the next time I go to the store. If I'm going to fire up the grill, I may as well cook a good bit of wings. They'll serve me well for 2-3 days.
