HAPPY MONDAY EVERYONE! So, what is everyone cooking?

Lady #1: Lobster low country boil; crusty bread; salad
Lady #2: Lobster low country boil; crusty bread; salad, same but lobster vs crab; and fruit vs green salad

Me: Grilled salmon, cole slaw; and corn on the cob, watermelon

KC, I could just go for the crusty bread and salad.
Tonight we're headed out to our favorite steak house for my husband's 70th birthday.

Yesterday I made 2 strawberry pies and we grilled jumbo hot dogs with a Chinese cabbage salad, tonight it will be a macaroni tuna salad :)

I have leftover cooked roast, making a beef pot pie for tonight with a salad :D

Tonight it's..

Tex-Mex Turkey Meat Loaf

1 pound [454 g] ground chicken or turkey
3/4 cup [190 mL] frozen or drained canned corn kernels
1/2 cup [125 mL] chopped sweet red or green pepper, membranes removed and seeded
1/2 cup [125 mL] mayonnaise
2 green onions, sliced
2 tablespoons [30 mL] chicken broth or 2 pouches instant chicken broth mix
1/3 cup [80 mL] breadcrumbs
2 teaspoons [10 mL] chili powder


Preheat oven to 350°F [180°C].
Well mix together all the ingredients into a bowl.
Delicately pack mixture into an 8 x 4-inch [1.5-L] baking pan; smooth top of mixture.
Bake into preheated oven for approximately 1 hour, until juices run clear when pierced with a fork.
Leave to rest for 10 minutes before slicing.

I'm hoping to make Philly cheesesteak hot dogs (again) they keep getting put off. I am been very busy!
