Step by Step Method

Step 1

Saute almonds in 1/4 cup plus 2 tablespoons melted butter in a large skillet over medium heat until golden brown. Stir in lemon juice. Remove from heat, and set aside.

Step 2

Combine flour and salt; dredge fillets in flour mixture.

Step 3

Melt 1/4 cup plus 2 tablespoons butter in a a large skillet over medium-high heat. Add half of the fillets; cook 5 minutes on each side or until the fish flakes easily when tested with a fork. Remove to a serving platter and keep warm.

Step 4

Repeat procedure with the remaining 1/4 cup plus 2 tablespoons butter and fillets.

Step 5

Sprinkle with reserved almond mixture. Garnish, if desired.

Oh my, this was a delicious way to prepare trout. And so easy to make! The lemon juice added a nice touch to the toasted almonds. I will make this again, and I won't change a thing. Thanks for a great recipe, breezermom.

Made mostly as written for your Wk 2 Football Pool - My almonds were very finely slivered, so I skipped blanching them. I did add some Old Bay Seasoning to the almond-butter-lemon mixture. My DH is a fisherman & a bit of a purist when it comes to fresh trout he catches, but he had to admit this was excellent. I served this w/a cucumber salad plus mashed potatoes. 1 of your Mom's favorites also 1 of ours. Thx for sharing this recipe w/us. :-)
