Step by Step Method

Step 1

Put olive oil into a heated saucepan and then add the onion and almonds and cook till onions are soft and then put in the cumin, coriander and couscous and cook for about 5 minutes till slightly coloured.

Step 2

Add the water and bring to the boil and then turn down to a simmer and put on the lid and cook for 10 to 15 minutes until all the water has been absorbed.

Step 3

Stir and then add the dates and apricots.
