Spicy Grilled Shrimp

"Simple, Spicy and Quick. This can be served as an appetizer or even a main dish. Often, I just make up a bunch of skewers and pull the shrimp off after they are done and serve family style. But, these also make great mini appetizers - with or without a dip, which are great for parties; or how about tacos, sandwiches such as a Po-Boy; or even try on a pizza. You will need 30 minutes to marinate, no longer and then grill. If you don't have a outdoor grill, an inside grill pan will work just fine, or they can also be broiled."

Step by Step Method
Step 1
Shrimp ... This is so easy. Add the chipotles, olive oil, lime and orange juice, garlic, shallot and salt in a large baggie and mix well. Honestly, I just squish or squeeze the bag to combine everything - no need to get fancy. Add in the shrimp, close the bag and shake well to combine all the ingredients and make sure the shrimp are well coated. If you don't have a baggie, just use a non-reactive bowl (glass) and cover with plastic wrap.
Step 2
Skewers ... If doing this on an outdoor grill and using wooden skewers, make sure to soak the skewers 30 minutes in water so they do not burn. Remove the shrimp and skewer, making sure to go through 2 places on the shrimp so they are secure on the skewer. The amount of shrimp will depend on the size skewer you are using.
Step 3
Grill ... Don't forget to season and oil your grill - inside or out. Add the skewers to a medium high to high grill and cook 3-4 minutes on the first side and then flip and cook another 2-3 minutes. They cook very quick, so keep an eye on them.
Step 4
Serve ... You can pull off the shrimp and serve in a big bowl family style, or just serve on skewers as a main course; on small skewers as appetizers with a dip or without. Garnish these dishes with fresh cilantro and scallions. Or ... Use in a taco, a sandwich, or a pizza; really the recipe is so easy and good you can eat them any way you like. ENJOY!
